It seems like going through this much trouble and not knowing as much as is needed to be known about SQL that more time could have been saved just inserting the new columns into 7.4 manually.

Well thats all that SQL is doing is adding the columns from 8.1 that are not in your 7.4 dbo.character table and putting them in there.
There is no data to select and add from the 8.1 database an insert into the 7.4 data base except for the columns.
Until there are characters made in the 8.4 database there is no data, that is why people told you to populate the new columns with 0's for now because there is no data to add until you apply a title or gain arena points on said characters in the 7.4 data base the data is 0
As soon as you apply a title or something else for the new content add then the table will update the 0's

To be honest you guys are just playing with fire attempting to import old data (well at-least from 7.3) but even back in 7.3 to 7.4 several Dev's encounter dead-locking or random crashing usually related to a bad import or conversion import.
so a epic 8.1 server have to start all over again ?
because it's not a good idea to import old database filles and merge the database to keep the account characters?
there is a way to import these databases into 1 without making them crash etc..

i tried to insert the smp to and updated missing colums but still the game server is now crashing without making a crash log.
i found out it's not just the character table that should be transfered there are more tables to like dbo.title,dbo.titlecondition. i did copy these tables but still it does crash for some reason.
i am using the arcadia 8.1 backup + 7.4 auth
telecaster 7.4 combined with the missing colums smp and tables from 8.1.
hope you will find out more, ill keep working on it.
