Technically, the egold that's left free on our accounts does increase the star level even now and the only difference is that we still have the choice to eventually spend that egold and get rid of that additional star points.

Personally, I'd prefer having those thousands of egold on my account instead of additional star level even if I couldn't spend it, simply because it looks more prestigious than the stars do.
