An ssh tunnel is setup when you create a special connection with a unix / linux server where
you have a shell login-account. There are many shell servers on the planet, including in Poland.
When the tunnel is setup you tell firefox (e.g) that you have a sox5 proxy on the port you've defined
in the tunnel. Because of the
two way encryption you have a much more secure connection
than a plain link between you and a random (unknown) proxy server which is snoopable with
man-in-the-middle tactics.
Some shell servers have a specific tunnel restricted environment for ssh tunnels, just to enhance
your security.

I should add a note that in the documentation provided in the link, you don't need to set-up and ssh
server yourself, since you will create a shell-account on a free unix / linux shell server (a polish one).
