The "Onion Knight" was meant to be an insult from highborns to insult Davos for being lowborn. The title originated when he saved Stannis and his defending garrison during Robert Baratheon's rebellion. Trapped and beseiged at Storms Watch, losing to starvation, Stannis and his men survived by Davos smuggling food supplies (only one of which was onions) into the garrison. It is the reason he was knighted, although he was also punished for his crimes as a smuggler by losing the tips of the fingers on his off hand (right hand, he's a lefty) and he bears his title proudly as the only one Stannis can truly trust (Stannis doesn't have much faith in highborns).
