my guess on the 2nd is that it is a very early version of a monster, like they created a test mesh (thats why its in blocks instead of smooth, rounded features) and then created a grid-like texture to fit over it. they made the different squares seperate colors so they could easily see what went were on the monster in game, in order to tell what they needed to draw where on the texture. sometimes programmers leave in early work on accident, look through just about any computer game thorougly enough and youre bound to find something.
