This is going to be a short ( or maybe not so much ) guide to specialisation in professions, including necessary materials and where to find your specialisation giver / quest giver.

Specialising in alchemy gives you the ability to create more than one potion / elixir / transmute ( depending on specialisation ) out of the same amount of materials, although it is based entirely on random chance ( about 15% per one, including the possiblity that extra ones have a chance to proc more extra ones ). Choose the one you will think will benefit you most / make you the most cash.
2.1 Master of Elixirs

I would not really recommend doing this, as it is usually much easier to do Master of Potions and then respecialise to this from it - due to the Black Morass runs needed.

2.4 Respecialisation
If you go to the person who gave you the last quest in the chain (the one that required materials) you may lose your specialisation for the small cost of 150g. You may then head to the other trainers (see above for their WoWHead pages / locations) and learn the quest without any cost or quest required.
3. Blacksmithing

4. Engineering
Specialisation in engineering opens up certain specialisation-only trinkets and consumable items, as well as a type of ammunition from the Ashen Verdict that is considerably better than any other. 4.3 Respecialisation

Click Here To Register...] in Tanaris ( just north of the port to the East of Gadgetzan ) and read the book Soothsaying for Dummies next to him twice. It should offer you the ability to respec ( which will cost around 150g ) and then give you a choice to pick a new specialisation. If it does the first but not the latter, you'll have to do the questline for the other specialisation.
5. Leatherworking
Specialising in leatherworking gives you the ability to wear some Burning Crusade specialisation specific items, which are pretty out of date by now, but if you wish to "finish off" your profession, you need to do this.
5.1 Dragonscale Leatherworking

To respecialise, you head to the person that trainer you, and have him break you of your specialisation for a cost that varies on level (100g at 80, I think), and then head to [Only registered and activated users can see links. Specialisation in tailoring gives you the ability to create two of a material from the same materials as a single one, based on specialisation. This quest requires you to go anywhere in Netherstorm and use your item to summon a mob. If you can do more damage than guards, then it's suggested you summon it inside Area 52 or the Stormspire, but remember you have to loot it to get the items. Run back and turn in your quest. Congratulations, you are a Spellfire Tailor!
6.4 Respecialisation
To respecialise, you must head to the trainer who you got the quest off, pay a level dependent amount of money to break you of your training and then head to another trainer and pay them 20g to learn your new specialisation.

4.3 Respecialisation
Go to the house of [Only registered and activated users can see links. Click Here To Register...] in Tanaris ( just north of the port to the East of Gadgetzan ) and read the book Soothsaying for Dummies next to him twice. It should offer you the ability to respec ( which will cost around 150g ) and then give you a choice to pick a new specialisation. If it does the first but not the latter, you'll have to do the questline for the other specialisation.
5. Leatherworking
Specialising in leatherworking gives you the ability to wear some Burning Crusade specialisation specific items, which are pretty out of date by now, but if you wish to "finish off" your profession, you need to do this.
5.1 Dragonscale Leatherworking

Click Here To Register...] for Horde, where you get the quest Dragonscale Leatherworking [[Only registered and activated users can see links. You'll need to pick up the recipes for the breastplate and the gloves, but that's fairly easy. Just buy them off the AH or grind for them in Tanaris.

To respecialise, you head to the person that trainer you, and have him break you of your specialisation for a cost that varies on level (100g at 80, I think), and then head to [Only registered and activated users can see links. Click Here To Register...] in Tanaris, just north of the port east of Gadgetzan, read the book next to him and learn whatever specialisation you like.
6. Tailoring
Specialisation in tailoring gives you the ability to create two of a material from the same materials as a single one, based on specialisation. 6.1 Primal Mooncloth Tailoring

The quest requires you to open the bag you are given, head to the Moonwell in Cenarion Refuge in Zangarmarsh, and use your quest items there. Run back and turn in your quest. Congratulations, you are a Primal Mooncloth Tailor!
6.2 Shadoweave Tailoring
Head to the Lower City in Shattrath, and go to find [Only registered and activated users can see links. Head to the Altar of Shadows in Shadowmoon Valley ([Only registered and activated users can see links. Click Here To Register...]), and use the crystal you are provided with there. Run back and turn in your quest. Congratulations, you are a Shadoweave Tailor!
6.3 Spellfire Tailoring
Head to the Lower City in Shattrath, and go to find [Only registered and activated users can see links. Click Here To Register...] and get the quest [Only registered and activated users can see links. Click Here To Register...]. This quest requires you to go anywhere in Netherstorm and use your item to summon a mob. If you can do more damage than guards, then it's suggested you summon it inside Area 52 or the Stormspire, but remember you have to loot it to get the items. Run back and turn in your quest. Congratulations, you are a Spellfire Tailor!
6.4 Respecialisation
To respecialise, you must head to the trainer who you got the quest off, pay a level dependent amount of money to break you of your training and then head to another trainer and pay them 20g to learn your new specialisation.
