Betas are mostly done so players could give suggestions about the server before it goes live. Even small changes can have a huge impact on how easy it is to gain power in the server. And as you said, people are the server's money supporters so their opinion is important and it's better to get it in a beta than in a live server, since testing around may leave bugs (the infamous BoI Evolution red box bug if you want an example).

for example 1 week of testing with daily iterations on feedback.

actually its your choice to waste time on playing betas or if you dont want to do so....since you cant expect a server to be perfect even PWE has some bugs....so its not realy a waste of time playing on betas "if" the dev/owners taking the suggestions of the players.. and vancourt doing beta just to get more time implementing those suggestion he gets from players and fixing bugs ingame...

Don't mention PWE. They have bugs since release that noone tried to fix. They're not capable of managing servers, they just care about $ and they will run the server as long as they can get even 1$.

having a beta phase is always a good idea, but making server go live in the middle of a week? - not so much.
weekend is the best time to start a new server. too bad you can't open it next weekend, as ArcheAge is going live and you could lose potential players
