WTF item_list.txt does?

I'm doing some work and I deleted some lines in item_list.txt (locale_de). Next I go to the game and I try to take the item which I deleted and it appears.

Next I go again to the item_list.txt and I deleted more items, compress the locale_de, go into the game and ALL ITEMS STILL WORKING (Icon, texture, model)...

Example: Item 16500 don't exist on item_list.txt, but in game it have icon. How????

So, WTF item_list.txt does?

And how metin2 client load the icons and models?

you need to delete its from item_proto or from server from database (item_proto)

But I need this items, it's just a test. How it's possible item 16500 / 16520 / 16540 have icon in game, if it don't existe on item_list.txt? this is my question
