Involves editing server.dat (or overriding the data the client loads).

To edit server.dat you first need to override how the client loads the file so that you can bypass the decryption and load a non encrypted xml copy of the file.

Aka not something you are likely to be able to do without significant research on your own.

An easier way of doing that might be to just modify the window to remove the server list all together. You could edit the flash using a flash decompiler to just show a picture and the login dialog boxes. You might have to edit the Win32 resources for the window as well, I can't remember; I've never done something like this. That's how I'd approach it without reverse engineering much.
