Hey there, this may be old news to some of you, but I just found out on my draenei shaman.
When you right-click a mob out of melee range, your character is "preparing for battle" and if you do so, and then turn into a ghost wolf, your wolf will have the weapons equipped. So:
1: Right-click a mob out of melee range
2: Turn into a ghost wolf
result: Your ghost wolf will have weapons equipped.
