how are "host" file bypass made for games to bypass AC?

i cant find a single tutorial in english, all are in indians, some weird language, can someone explain or provide info?

as far as i know you run a firewall
collect all the addresses the game connects to and make it into a hosts/host file but how do you figure out what to do block or what to do?
can it be done on PC for some online games to avoid detection/cheat without getting banned? i know that there is a "hosts" file for windows which could be used for redirecting, blocking servers
