Well, there's Eternia Games EGShaiya, which to my knowledge is the very first EP 8 private server I've seen. It's maybe two weeks old, and still getting everything put together and drop rates adjusted, but it's there. Very few people yet, but hey, it's still new.

Sorry to ruin this for you, but there was another ep 8 server released since summer but they shutted it down.

there was one ep8 server but eventually shut down cause too many bugs and game play is just terrible
