they wont start searching for bugs just because there are no sun items... they will simply not join the beta at all which is bad for you

First of all ones who are really interesting in this server will come and play no matter with or without Sun items in Beta.

So why should adding or not adding Sun items in Beta be the "key" for success?

There is more chance you will find bugs somewhere else then in buying Sun from NPC and go PvP each others pretending to testing skills but actually it's just for fun. Skills can be also tested on any other type of weapon, not just Sun.
