Search for a good java decompiler, rewrite the code, recompile it and replace it with the old.

There are lot of java decompiler because .class files are a kind of pseudocode that jvm interpretes and are easily decompiled. Use google, for an ide use eclipse

.jar files, can be simply oppened with program like winrar.(.jar) files .
If you are looking for an editor or IDE - netbeans or eclipse.

But in there you just can find .class files, which are compiled .java files.
You can't read anything from it, so you need a decompiler.

There is old version of openstealth so i think that he wanna edit it for Private Server or something like that

I am 99% sure that you can open the .class files in netbeans. I know it sounds strange, but some time ago I tried to open 1 of the minecraft.class files and it worked. Right now I don't have the program, but you don't lose anything if you try.
