Editing Npcs

Just wondering which files
i use to edit *Npcs*

Such as:

Dialogs.
Options.
Commands.
Etc..

i can answere one question of u only

dialogs and displayed text u need to cange in the Textstring files serch a lil bit around and u will find the textstring u want to edit

even by searching in the string files i still cannot find the dialogs from npcs.
i do find like the npcs them selfs etc but not there writing example.

Another Question.
After i looked into npc.csv you see all the job code ids.
in which file do they all link up in?
so the npc option you click say [Fortify] blah blah
it actually pulls up the next window?
does any1 know.
