This will sound a little nooby but I was wondering how people put str6 and int 6 into their gear, is it through the alch system or do you have to find the item like that?

you get the STR/INT tabs and use some stuff to convert them into Stones and use them on the thing you want to add it to

It depends on your luck and your alchemic luck (premium etc.) whether you get Str/Int 1-6

Yes, each one with a lucky powder and the stone of the corresponding degree...either it is +Str or +Int.
