In demo Ultimatate Team trainer there is only way to boost pace and shooting. So it's not 99 but opponent know that you cheat.

they can, this cheat boost pace and shooting to 99, so the overall of the players is not 99, but its something like 90-95, clear cheat, easy report and wiped from WL.
